Byrdi is tucked away within Melbourne's vibrant new food precinct (don't call it a food court), Ella. It was a new entry at No.80 in The World’s 50 Best Bars 2020, which is especially impressive given the venue only opened in 2019. Byrdi is seriously cool, coming complete with its own lab for creating bold new ingredients, but don't go thinking this is an overly-reverent experience: you're still going to have a damn good time. The cocktail list is split into three categories: seasonal creations, ferments and highballs and all are experimental in flavour, like the Jungle Byrd, which mixes Carolina Reaper chilli, bitters, lacto-fermented pineapple and Davidson Plum, all served alongside a selection of small plates, with the option of a three- or five-course food and drink pairing.
