          Culinary Roots Castilla-La Mancha

          Castilla-La Mancha is an immense cultural landscape located in the centre of Spain, dotted with archaeological sites, Roman towns and villas, medieval sites, as well as unique sights such as its black architecture towns and Manchego villages, known for their houses with white and indigo blue façades.

          The gastronomy of Castilla-La Mancha transcends time, not only because of the uniqueness of its products, but also in terms of techniques that have been preserved over the centuries, not only in Spain, but throughout the world.

          Castilla-La Mancha is proud to cook with its excellent raw materials, prioritising local techniques passed down from its ancestors. Castilla La Mancha features 11 restaurants with Michelin stars, with 13 chefs promoting and raising the profile of its cuisine.
