Lima’s flouncy, fabulous belle époque Hotel B, in the city's Barranco district, looks a little like a smartly iced wedding cake, all shell-white pillars and pristine plasterwork facing off against the spray-topped waves of the rolling Pacific Ocean. Perhaps the B in its name stands for beautiful. Originally a private residence, this pretty seaside stay has been transformed into a home-from-home South American escape and is now the city’s only Relais & Châteaux address. Twenty rooms (including six suites) are spread across the building, the largest and poshest in the oldest parts of the property. The limited guest numbers keep it intimate, as do its secluded corners. Take a book from the cosy library bar (which doubles as the breakfast room) and a rattan chair on the dinky rooftop for a reading spot with distant mountain views. In a city famed for its dining, hotel cuisine must shout to be heard. Franco Hurtado’s dining room does just that, plating up a menu plump with native ingredients: green clams come with a cilantro emulsion, river shrimps hide beneath a chupe foam, and baby goat arrives stewed in a seco sauce. It’s cooking that inspires reverence from locals and guests alike.
