La Calma by Fredes

Coastal South America and especially Chile are fêted the world over for their beautiful, bountiful seafood, so it stands to reason that this is where you'll find one of the world's finest fish restaurants. La Calma by Fedes was ranked at number 98 in the 2022 list of Latin America's 50 Best Restaurants and, while the quality of the produce chef Marino Telúrico and his brigade are working with has a lot to do with that, their skill in deftly and imaginatively preparing it cannot be understated. Take a seat either out on the canopied terrace or in the elegant, sunlit dining room and take your pick from mountains of freshly-shucked oysters, sea bass confit in olive oil, abaolone with potatoes and house-made mayonnaise or Patagonian King crab drenched in brown butter and served with plump spears of asparagus.
