Lahnyai Nusara

Bangkok, Thailand

To step through the wide double doors of Bangkok’s Baan Turtle building is to step onto chef Thitid ‘Ton’ Tassanakajohn’s home turf. Having made his name in fine dining, Lahnyai is the less formal, more modern spin off to his lauded Nusara – a high flyer on Asia’s 50 Best Restaurants List. Translating as ‘Grandmother’s boy’, consider it an homage to his heritage. Picking up where he left off at NUSra, he pushes the envelope on his Grandma’s recipes even further here. Their essence remains, albeit with an almost post-modern edge. A bijoux setting – mirrored ceiling, bright green walls, family photos, rattan chairs, curving velvet-lined pass – frames the vibrant 14-course tasting menu. Expect European technique and ingredients (read: loads of truffle) across emblematic Thai plates. Plates are colourful, engaging and balanced to within an inch of their life across samrub-style mains (a banquet-like offering of five dishes served simultaneously). Examples? A crispy cup (a nod to khanom buang) filled with scallion
