Le Sputnik
Tokyo, Japan
Named after the first artificial satellite to orbit the earth, Le Sputnik (which means ‘travelling companion’ in Russian) takes diners on a similarly far-out journey by uniting Japanese ingredients with French technique. The restaurant is the brainchild of chef-owner Yujiro Takahashi, who trained at such Paris legends of gastronomy as Ledoyen and Chez L’Ami Jean. With two tasting menus served to just three tables of diners, guests are assured of a highly personal experience from both the dinner-jacketed waiters and the chef team in the diminutive kitchen, visible through a glass wine cabinet. Highly creative combinations of ingredients display an unfailingly sure touch for unexpected juxtapositions of flavour and texture, while the presentation is superb, especially in story-telling signature dishes such as smoked oyster with a foamy Roquefort sauce like a wave breaking on the rocky shore.
