A collaboration between JIA Group’s Yenn Wong and French chef Julien Royer (of Asia’s 50 Best previous No.1 Odette), much-hyped Louise is located within the gardens of the historic PMQ design centre. The two-storey site has a cocktail bar at ground level and a dining room above, all designed by André Fu of Upper House fame, who has fashioned a colonial look for the light-filled space (palm trees, rattan chairs) which reflects the refined nature of French cuisine while keeping the atmosphere casual. Cooking arrives via Chef Franckelie Laloum's open kitchen via a final tweak at the pass and, while dishes are inspired by Royer’s childhood on a farm in Auvergne, ingredients such as Challans duck and Kristal caviar are far from rustic. Asian flavours are introduced judiciously and never to pay lip service to the location, and there is an emphasis on balance and lightness throughout. Exquisite desserts from the pastry kitchen, too.
