The clue is in the name when it comes to this forward-thinking bar with its stylish, old-time interior, complete with pressed metal ceiling and rustic wooden bar top. From hospitality business Spirits & Sharing, known for venues such as Mixology Salon and Mixology Akasaka, and for their cutting edge approach to drinks creation, Mixology Heritage offers a nod to the past. The intention here is to revisit the canon of classic cocktails, and then go beyond these. Shelves behind the bar, meanwhile, are adorned with a curated selection of vintage bottles from days gone by, used in cocktails such as the Ultimate Martini, with gin from as far back as the 1950s, and vermouth from the 1970s. The in-house aged cocktails are a highlight, maturing in jars on the back bar.
