Mosu is named after the Korean pronunciation of the cosmos, a flower that Sun Anh remembers from the backyard of his childhood home. This fond memory was perhaps at the forefront of the chef’s mind during the 12 months he operated the restaurant to acclaim in San Francisco. Now Anh hopes to give his diners equally happy memories with a tasting menu that, while roaming occasionally overseas, doesn’t stray too far from the shores of Korea – or even the restaurant itself – in the likes of barbecued quail with vegetables from Anh’s garden. Terse menu descriptions give little idea of the labour involved in each dish; the signature opener of burdock bark, for instance, involves coating a thinly sliced piece of burdock root with syrup, dehydrating it and repeating the process until it has acquired the requisite crispness. The expert wine matches are no less exacting.
