Opened in early 2024, Dry Wave Cocktail Studio is the first independent solo project from established Bangkok bar face Supawit ‘Palm’ Muttrattana. And having spent almost two decades honing his craft at leading drinking spots in the Thai capital including Vesper, Backstage and Rabbit Hole, he has poured his experience and creativity into this well-conceived and precisely executed bar.
Perched above street level and accessed by an outdoor staircase, the space has a secluded retreat-like feel in the middle of the city. The modernist interior features a wave-like ceiling design and a long fluid marble-topped counter-cum-bar (guests can sit either side of it in one section) as the focal point.
However, it is in the Super Classic cocktail menu that Muttrattana and his team – which includes head bartender Leo Parom and bartender Moog Nattapach – truly express themselves. Each of the 14 signature libations is a combination of two conventional classics, merging sometimes contrasting flavour profiles and spanning different eras. It is testament to the team’s mastery of the cocktail craft that the results are not just unexpected and original but also delicious.
Examples include: Love Birds in Venice (tequila, peach, grapefruit, agave syrup, prosecco) combining the fruity notes of a bellini with the citrus tones of a paloma; the Open Sesame (scotch, vermouth, plum wine, ginger, sesame) blends a white negroni with the spiciness of a Penicillin; the 1806-1988 (bourbon, kyoho liqueur, apple cider and cranberry cordial, orange bitters) takes an original boozy old fashioned and modernises it with elements of the cosmopolitan.
Guests can also opt for any of the unadulterated classics if they prefer, and a range of more conventional cocktails such as a pisco sour or coconut daiquiri. And yet Dry Wave is about more than just the excellent drinks it serves. Each detail has been carefully thought through, from the smart menu design to the premium sound system: the latter pumps out a diverse array of musical genres, from funk to disco, electro to pop.
It results in a bar that is set to become a significant force in the increasingly influential Bangkok hospitality scene, further enhancing the city’s reputation for outstanding food and drink. Having entered the extended list of Asia’s 50 Best Bars so early in its life, Dry Wave Cocktail Studio also merits being named the Campari One To Watch 2024.
