In the kitchen, seasoned chef Ramón Chiliguay produces a Mediterranean cuisine that pairs modern presentation with classic flavours. Expect appetisers of red tuna tiradito and Provençal mussels, while stand-out mains include trout fillet over carrot purée with charred endive, sea bream with black olive gnocchi, and a prawn ragout tagliatelle doused in a basil vinaigrette.
