Sofia Pfannl
Located in hip Villa Morra in the Paraguayan capital, Pakuri is built from recycled shipping containers and has a strong sustainability focus. Chef Sofía Pfannl serves a menu of creative New Paraguayan cuisine with meats cooked in a traditional tatakua oven and several types of local fish served with indigenous herbs, fruits and vegetables (‘pakuri’ is the name of an indigenous fruit). Dishes include beef tartare with cassava chips, surubí fish tataki or gnocchi made from tajao, a type of wild cabbage.
Meanwhile, Pfannl’s husband, sommelier José Miguel Burga, curates an interesting wine and cocktail list with drinks like Cocido Ka’ure, made from mate and sugar served with local sugar-cane spirit, gin and grapefruit. Pfannl and Burga met while working at Central in Peru, the three-time No.1 in Latin America’s 50 Best list.
