Restaurant A.T.
Paris, France
Vice magazine once named Atsushi Tanaka 'the most underrated Japanese chef in Paris', while his mentor Pierre Gagnaire (no less) dubbed him 'the Picasso of the kitchen'. So, it would be fair to have high expectations of his eponymous restaurant, a stone's throw from The Sorbonne. Luckily, those expectations are sure to be met by Tanaka's innovative fusion of Japanese and French flavours and techniques. There's a compact lunch menu on offer, priced at $100 in addition to an indulgent $200 tasting menu incorporating dishes like hand-dived Norwegian scallops with rose pesto and pickled ramson flowers or Brittany abalone with chestnut, black garlic and liver. The dining room is a simple monochrome affair, which lets the frankly gorgeous dishes do all the talking – this is the kind of place where even the tableware is a work of art.
