Founded in 2011 by Juan Manuel Ortiz, who returned to Bogotá after time spent in Australia, Salvo Patria was originally an artisanal coffee business and later became a restaurant inspired by the diversity of Colombian produce, when Ortiz teamed up with chef Alejandro Gutiérrez. In a small house in trendy Chapinero Alto, the restaurant serves an ever-changing menu based on sustainable ingredients from producers with whom the owners maintain close relationships.

Gutiérrez serves dishes such as cured sea bass or smoked trout, and there are vegan items such as roasted mushrooms with macadamia sauce. Come with an open mind and prepare to learn about indigenous produce you may not have never heard of. And thanks to Ortiz’s experience in Melbourne, Salvo Patria is still the best place in Bogotá for specialist coffee.
