Opened in 2022, this pan-Asian Kappo-style shophouse restaurant is the first solo venture of chef Nicolas Tam (ex-Joel Robuchon, Esora and Zen), adding value to Singapore’s infamously competitive dining scene. A cool oasis of calm amid the bustle of the CBD, the dining room is designed in chocolate browns with grey accents. There's a 10-seater counter overlooking the theatre of the kitchen, a few tables to suit small groups and a private room for those looking for more privacy. Daily updated tasting menus meld French technique with premium Japanese ingredients, resulting in expertly balanced dishes that, from the fluffy nori bread to the grilled blackthroat sea perch on a parcel of lightly charred onigiri, honour sustainable, seasonal Japanese cooking. Lunch is served on Fridays and Saturdays only, dinners from Tuesday to Saturday, with the restaurant closed on Sundays and Mondays. Reservations are strongly advised.
