Clocking up experience at arguably Peru’s most acclaimed restaurant, Central, young Venezuelan chef Juan Luis Martínez flew the nest in 2018 to open Mérito. It’s a tiny two-floor establishment, with an open kitchen, in trendy Barranco. The culinary duo update Venezuelan dishes while giving Peruvian ingredients a new identity. Whole catch of the day with baked arepa and butter is designed to share. And it’s hard to choose between grilled soursop (a tropical Caribbean fruit) and the chocolate rock for dessert.
