Its monthly-changing menus allow Lettice not only to work with exceptional, micro-seasonal products, but also to discerningly choose suppliers that echo its sustainability mission statement. The business actively invests in innovative sustainable practice; all food waste is enzymatically digested or composted and returned to Lettice's vegetable supplier.
